Tom Galvin teaches Hospitality Facilities Planning and Design

HFT 4343 Hospitality Facilities Planning and Design | Spring 2007

Tom Galvin and Chris Muller taught this great course together, Hospitality Facilities Planning & Design to a group of 75 upper level Rosen College students. Using a team based approach, each small group of students was given a real set of working documents and required to create a restaurant concept for the space. With the help of industry experts throughout the semester, and as a special judging panel at the end of the term, all of the work undertaken reflected a “real world” process. By the end of the semester, students in the course could:

  • Explain the design and development process commonly experienced for foodservice and hospitality facilities, as well the activities that occur during each phase of this process.
  • Read and interpret basic architectural plans.
  • Analyze and recognize both positive and negative design features.
  • Understand the spatial relationships of a well designed facility, including the concepts of flow and efficiency.
  • Identify basic design considerations for restaurants using appropriate analysis for each market segment.
  • Acquire the knowledge to select and specify equipment that is appropriate for a required function within a facility.
  • Create and present a professional quality facilities design proposal.
